High Protein Frozen Peanut Butter Greek Yogurt Bites (Printable Version)

Creamy frozen Greek yogurt bites swirled with peanut butter, topped with chocolate chips, peanuts, or coconut.

# What You Need:

→ Yogurt Mixture

01 - 1½ cups plain Greek yogurt, preferably nonfat or 2%
02 - ½ cup natural peanut butter, smooth or crunchy
03 - 3 tablespoons honey or maple syrup
04 - 1 teaspoon vanilla extract

→ Toppings

05 - 2 tablespoons mini chocolate chips
06 - 2 tablespoons chopped roasted peanuts
07 - 1 tablespoon unsweetened coconut flakes

# How To Make It:

01 - Line a mini muffin tin or small silicone molds with paper liners, or lightly coat with nonstick spray.
02 - In a medium bowl, combine Greek yogurt, peanut butter, honey or maple syrup, and vanilla extract. Stir until smooth and fully incorporated.
03 - Spoon the mixture evenly into the prepared molds, filling each about three-quarters full.
04 - Sprinkle desired toppings over each filled mold, gently pressing them into the surface to adhere.
05 - Place the tin or molds in the freezer for at least 2 hours, or until the bites are completely firm.
06 - Remove the frozen bites from the molds and transfer to an airtight container. Store in the freezer and enjoy directly from frozen.

# Helpful Hints:

01 -
  • They taste like Reese peanut butter cups had a healthier, protein loaded cousin that you can eat without a second thought.
  • No baking, no cooking, and barely any cleanup means you can have a whole batch prepped before your coffee finishes brewing.
02 -
  • Let them sit at room temperature for about two to three minutes before eating because the texture goes from rock hard to perfectly creamy with just a short wait.
  • Do not skip the liners or spray because frozen yogurt bonds aggressively to metal and you will end up digging broken pieces out of the tin.
03 -
  • Warm the peanut butter for fifteen seconds in the microwave before mixing so it blends into the yogurt without requiring aggressive stirring.
  • Double the batch because sixteen bites sounds like plenty until you realize you have eaten six of them standing at the freezer door.
