# How To Make It:

03 - Whisk eggs with cottage cheese, salt, and black pepper. Pour the mixture into the skillet with the vegetables.
04 - Gently scramble until eggs are just set. Remove from heat.
05 - Divide cooked quinoa or brown rice (if using) into four bowls. Top each with the scrambled egg mixture and diced chicken breast or turkey sausage.

# Helpful Hints:

01 -
  • The combination of eggs and cottage cheese creates the creamiest texture without any heavy cream
  • You can prep the components on Sunday and assemble these in under 5 minutes on busy mornings
02 -
  • Overcooking the eggs makes the cottage cheese texture grainy instead of creamy
  • Letting the vegetables cool slightly before adding the eggs prevents them from scrambling too fast
03 -
  • Whisking the cottage cheese thoroughly prevents any lumps in the final eggs
  • Letting the eggs rest off heat for 30 seconds before serving makes them even creamier
