# What You Need:

→ Dough

01 - 3½ cups all-purpose flour (440 g)
02 - ¼ cup granulated sugar (50 g)
03 - 2¼ teaspoons active dry yeast (1 packet, 7 g)
04 - ½ teaspoon salt
05 - ¾ cup warm whole milk, about 110°F (180 ml)
06 - ¼ cup unsalted butter, melted (60 g)
07 - 2 large eggs, room temperature

→ Filling

08 - ½ cup unsalted butter, softened (110 g)
09 - ¾ cup packed light brown sugar (150 g)
10 - 1½ tablespoons ground cinnamon
11 - ⅓ cup rainbow sprinkles (70 g)

→ Vanilla Glaze

12 - 1½ cups powdered sugar (180 g)
13 - 2–3 tablespoons milk
14 - 1 teaspoon pure vanilla extract
15 - Additional rainbow sprinkles for garnish

# How To Make It:

01 - In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, active dry yeast, and salt until evenly combined.
02 - Pour in the warm milk, melted butter, and room-temperature eggs. Mix using a dough hook attachment or wooden spoon until a sticky, cohesive dough forms.
03 - Turn the dough onto a lightly floured surface and knead for 8 to 10 minutes until smooth and elastic. Transfer to a greased bowl, cover with a clean towel, and let rise in a warm spot until doubled in size, approximately 1 hour.
04 - Punch down the risen dough and roll it out on a floured surface into a 16×12-inch rectangle.
05 - Spread the softened butter evenly across the surface of the dough. Sprinkle the packed brown sugar, ground cinnamon, and rainbow sprinkles in an even layer over the butter.
06 - Starting from the long side, roll the dough up tightly into a log. Using a sharp knife or dental floss, slice into 12 equal portions. Arrange the rolls cut-side up in a greased 9×13-inch baking dish.
07 - Cover the dish and let the rolls rise for 30 minutes until puffy. Meanwhile, preheat the oven to 350°F.
08 - Bake the rolls for 22 to 25 minutes until the tops are golden brown and the centers are cooked through.
09 - While the rolls are still warm, whisk together the powdered sugar, milk, and vanilla extract until a thick, pourable glaze forms. Drizzle generously over the rolls and finish with additional rainbow sprinkles. Serve warm.

# Helpful Hints:

01 -
  • The sprinkles melt slightly into the brown sugar and cinnamon, creating little pockets of sweetness that surprise you in every bite.
  • They look wildly impressive but follow the same rhythm as regular cinnamon rolls, so you get all the credit without extra effort.
02 -
  • If your kitchen is cold, the dough will take longer to rise, so turn your oven on for one minute, turn it off, and place the covered bowl inside for a cozy proofing environment.
  • Dental floss makes dramatically cleaner cuts than a knife because it compresses the log instead of squishing it downward and warping the spiral shapes.
03 -
  • Stir a tablespoon of cream cheese into the glaze for a subtle tanginess that cuts through the sweetness and makes the flavor more interesting.
  • Do not overfill with sprinkles, as too many create gaps in the filling and the rolls will unravel during baking instead of holding their beautiful spiral shape.
