Crispy Halloumi Avocado Toast (Printable Version)

Crispy halloumi and lemony mashed avocado on toasted sourdough, finished with olive oil, microgreens and seeds.

# What You Need:

→ Bread & Cheese

01 - 4 slices rustic sourdough or multigrain bread
02 - 7 oz halloumi cheese, cut into ⅜-inch thick slices

→ Avocado Topping

03 - 1 large ripe avocado
04 - 1 tablespoon fresh lemon juice
05 - Salt and black pepper, to taste
06 - ½ teaspoon chili flakes (optional)

→ Garnish

07 - 2 tablespoons extra virgin olive oil, divided
08 - 1 small handful microgreens or arugula
09 - 1 tablespoon toasted pumpkin or sesame seeds (optional)

# How To Make It:

01 - Toast the bread slices to your preferred level of crispiness using a toaster or grill pan. For extra flavor, rub each warm slice with a halved garlic clove.
02 - Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Arrange the halloumi slices in the pan and fry for 2 to 3 minutes per side until deeply golden and crispy. Transfer to a plate and set aside.
03 - While the halloumi cooks, halve the avocado and remove the pit. Scoop the flesh into a mixing bowl and add the lemon juice, salt, pepper, and chili flakes if using. Mash with a fork until mostly smooth but still slightly chunky.
04 - Spread the mashed avocado generously over each toasted bread slice. Lay the crispy halloumi pieces on top of the avocado layer.
05 - Drizzle the remaining olive oil over each toast. Scatter microgreens and toasted seeds on top. Serve immediately while the halloumi is still warm.

# Helpful Hints:

01 -
  • The contrast of golden crunchy halloumi against silky mashed avocado is genuinely addictive, and you will want it every single weekend.
  • It comes together in under twenty minutes with zero fancy technique, which means you can make it half asleep and still feel like a genius.
02 -
  • Halloumi waits for no one, so have everything else fully ready before it hits the pan because it toughens as it sits.
  • Rubbing a cut garlic clove across the hot toast before adding avocado creates a subtle savory layer that people always notice but can never identify.
03 -
  • Pat the halloumi slices dry with a paper towel before frying because moisture is the enemy of a good crust.
  • Slice the halloumi at a slight angle to create larger surface area for caramelization and a more impressive looking piece of cheese on each toast.
