01 - Wash and optionally peel the russet potatoes. Cut them lengthwise into evenly sized 1/4-inch thick fries.
02 - Place potato sticks in a bowl of cold water and soak for 30 minutes to extract excess starch.
03 - Drain potatoes and thoroughly pat dry using clean kitchen towels to remove moisture.
04 - Transfer dried fries to a large mixing bowl. Add olive oil, salt, black pepper, paprika, and garlic powder. Toss until all fries are evenly coated.
05 - Set air fryer to 380°F and preheat for 3 minutes.
06 - Layer the fries in a single layer in the air fryer basket. If necessary, cook in batches to prevent overcrowding.
07 - Cook for 15 to 20 minutes, shaking the basket halfway to ensure even browning, until fries are crisp and golden.
08 - Sprinkle with additional salt if desired and serve immediately while hot.
