# How To Make It:

01 - Preheat oven to 400°F (200°C).
02 - Divide the cottage cheese equally between two small oven-safe bowls, spreading it into an even layer.
03 - Spoon pizza sauce evenly over the cottage cheese layer in each bowl.
04 - Top with cherry tomatoes, red onion, bell pepper, and black olives, distributing evenly across both bowls.
05 - Sprinkle mozzarella and Parmesan cheeses over the vegetables in each bowl.
06 - Arrange turkey or vegetarian pepperoni slices on top, if using.
07 - Season each bowl with dried oregano, dried basil, crushed red pepper flakes, salt, and pepper.
08 - Place the bowls on a baking sheet and bake for 12-15 minutes, until the cheese is bubbly and slightly golden on top.
09 - Carefully remove from oven, garnish with fresh basil leaves if desired, and serve immediately while hot.

# Helpful Hints:

01 -
  • The cottage cheese melts into the sauce in a way that creates this impossibly creamy base you would never expect from something so simple.
  • It delivers every comfort of pizza without the heaviness of dough weighing you down afterward.
  • Cleanup is almost comically easy since you build and bake in the same bowl.
02 -
  • Those oven safe bowls hold heat longer than you expect so always use a towel or mitt when handling them even a few minutes after they come out.
  • Low-fat cottage cheese works but releases more liquid during baking so you may want to drain it slightly before assembling.
  • Not all pizza sauces are gluten-free so check the label if that matters to your diet.
03 -
  • Full-fat cottage cheese creates a richer creamier result but if you only have low-fat just pat it with a paper towel before layering to absorb excess moisture.
  • Baking on a sheet pan instead of directly on the rack saves you from potential overflow messes and makes removing the hot bowls much safer.
